Remove four (4) existing steam cooking kettles and platform. Remove four (4) existing steam cooking kettles and platform. Remove one (1) existing dishwasher. Selective demolition of FRP ceiling for equipment removal. Concrete backfill drain pit and housekeeping pads. Install four (4) new TUCS kettles or An Approved Equal with associated piping, install one (1) new Hobart pot and pan washing machine Or An Approved Equal with associated piping.
